Spud Pie
Ingredients:
- 6 medium Maine potatoes, peeled and sliced thinly
- 2 pie crusts (your favorite)
- 1 small onion, diced
- 4 chopped garlic cloves
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 egg, slightly beaten
- 1 cup sour cream
- 1 tablespoons chopped chives
Directions:
- Preheat oven at 400 degrees.
- Boil potatoes in water for 15 minutes; drain and set aside. Line a 9-inch pie plate with bottom crust. Put a layer of potato slices in bottom of pie. Sprinkle with one third of onion, garlic, salt and pepper mixture. Put two more layers of potatoes and onion mixture into pie.
- In separate bowl, stir together egg, sour cream and chives. Pour over potatoes.
- Top with top crust. Cut slits in the top and bake for 35-40 minutes, until crust is golden.
