8-10 round white or Yukon Gold Maine potatoes, boiled
butter or good pan drippings for frying
1 small onion, chopped fine
salt and pepper to taste
1 T minced parsley
“Slice the cold boiled potatoes endwise, then crosswise, making them like dice in small squares. Heat butter or good pan drippings in a frying pan and fry the onion until it begins to look yellow. Put in the diced potatoes and sprinkle well with salt and pepper. Stir well and cook about 5 minutes, taking care that you do not break them. They must not brown. Just before taking up, stir in the parsley. Serve very hot.”
