Roast the Potatoes
Preheat your oven to 425°F (220°C). Place the diced potatoes on a baking sheet. Drizzle with olive oil and sprinkle smoked paprika, cumin, garlic powder, salt, and pepper. Toss until evenly coated. Roast for 25–30 minutes, flipping once halfway through, until golden brown and crispy.

Cook the Ground Beef
While the potatoes roast, heat 1 tablespoon olive oil in a skillet over medium heat. Add ground beef. Break it apart with a spoon and cook until browned, no longer pink, and the internal temperature reaches 160°F (71°C). Add chili powder, cumin, onion powder, crushed red pepper, and a pinch of salt and pepper. Stir until well combined and slightly crispy around the edges. Set aside.

Assemble the Bowls
In each serving bowl, add a scoop of roasted potatoes, a generous spoonful of seasoned ground beef, black beans, corn, bell pepper, red onion, and avocado. Top with shredded cheese and sour cream. Garnish with cilantro and finish with a squeeze of lime juice.
Serve immediately while everything is hot and fresh.
