½ cup chopped onions
½ cup diced celery
1 clove of garlic, crushed
2 T butter
1 lb. ground pork
salt/pepper
¼ t thyme
1 t parsley
½ cup tomato juice
2 cups mashed Maine potatoes
1 egg, beaten
Brown onions, celery, and garlic in butter until onions become transparent.
Add pork, seasonings, and tomato juice. Cover and simmer for 10 minutes. Pour into greased pan, cover with mashed potatoes and baste with the beaten egg.
Bake in the oven for 25 to 30 minutes at 350 degrees until potatoes are golden brown.
