
Inspired by classic Tex-Mex flavors, this dish includes perfectly roasted potatoes as the base and spicy ground beef for protein. Every bowl is customizable, naturally gluten-free, and packed with flavor. With only a few basic steps and ingredients, you’ll have a full dinner that feels both fun and filling.
While the potatoes roast, heat 1 tablespoon olive oil in a skillet over medium heat. Add ground beef. Break it apart with a spoon and cook until browned, no longer pink, and the internal temperature reaches 160°F (71°C). Add chili powder, cumin, onion powder, crushed red pepper, and a pinch of salt and pepper. Stir until well combined and slightly crispy around the edges. Set aside.
In each serving bowl, add a scoop of roasted potatoes, a generous spoonful of seasoned ground beef, black beans, corn, bell pepper, red onion, and avocado. Top with shredded cheese and sour cream. Garnish with cilantro and finish with a squeeze of lime juice.
Serve immediately while everything is hot and fresh.
