390°F to ensure it reaches the right temperature for roasting.
Wash and cube your potatoes.
Add them to a saucepan and cover with water.
Bring to boil and par-boil the potatoes for 6–8 minutes (no more than 10).
Drain them well and let steam dry for 2–3 minutes.
Add the par-boiled potatoes to your baking dish along with:
Thyme,
Oregano,
Salt,
Pepper,
Olive oil.
Stir them gently to coat evenly.
Roast the seasoned potatoes in the oven for 30–40 minutes until they are golden brown and almost cooked through.
Place the feta in the middle of the tray.
Dip one side into seasonings if you like.
Squeeze over half of your lemon juice.
